Mix to open in early May

Mix New American Diner may be open in the next few weeks.

Chef/Owner John Pullis said that the restaurant is hoping to open in the first week of May or “sometime before the 10th.”

The restaurant will feature upscale versions of diner classics.

He’s currently working on all the final details, hiring some staff and adding another coat of paint and awnings to the exterior of the building, which has undergone extensive renovations since it was Bobby K’s Embers.

It was encased in plastic for some time this spring, while the exterior was being renovated.

Mayor Gary Van Eyll shared his impressions of the site with the rest of the Chaska City Council Monday night, saying “You will not know it’s the old Embers restaurant.”

We went there for lunch today, and LOVED it. I had the Goat Cheese, Roasted Red Pepper, and Herb omlette, and the better half had the pastrami sandwich.

I loved the omlette, with its creamy goat cheese and perfectly roasted peppers. The 7-grain toast needed something (perhaps a touch of butter), but the avocado and tomato garnish made up for it!

The better half liked the pastrami, but thought it would go better with rye bread. The focaccia was too tough for the pastrami, even though the meat was very savory.

We shared the hand-cut fries, which we both thought were great. The paprika aioli was a great accompaniment to the tender, double-cooked fries.

We didn't get dessert, but the cake doughnut bread pudding and apple crisp were very tempting, and we're looking forward to the next visit.

The service was fantastic, and we were in and out in less than an hour. We're looking forward to our next visit!

MIX = GYP We went there for lunch too but found $2.50 for French Fries and $2.95 for a Coke a little pricey for New York City much less Chaska. Mr. Pullis is trying to get his investment back in a big hurry. Sorry, we won't be back.

9 bucks for a burger, 4.50 for fries! No way! Too expensive. We actually got up and left when we saw the menu. So did our neighbors! I think there will be another business in there shortly!
