Big Fat Bridal Blog: When in doubt, eat cake

There is nothing to stall wedding planning quicker than the flu. Not long after we made plans to look at venues and even purchased tickets to a wedding fair, the fiance was struck with illness. After a full weekend spent nursing him back to health, I went down the same road (without the luxury of a nurse, I should mention). Now that the hacking and nose-blowing and general yuckiness has subsided, we're ready to get back on track and try again. This week, he (because he wants to be involved) is in charge of asking the remainder of his groomsmen to stand up for him as well as making appointments to look at potential venues. (I'm not-so-secretly hoping he'll read this blog, feel guilty about slacking and will finally quit dragging his feet on his assignment). For my part, I have arranged to taste cake. It may be too early to do so, but this is, quite honestly, the part we've both been looking most forward to. The whole point of attending that wedding fair (which we had to forgo) was to eat cake. Mmmm cake. So an appointment to taste cake was made. We, of course, have different visions as to what that cake will be on the day of our wedding, but we're willing to taste as many cakes as need be beforehand just to make sure we really know what we want. Without having tried any cakes yet, I'm leaning toward a lovely lemon cake with raspberry filling. For a summer wedding, I can't think of anything more perfect to go with champagne and cap off a great day. He wants chocolate. To my surprise, as I've laid out my vision to friends and family, most of them have scoffed at my resistance to chocolate. I didn't realize that when most people think of wedding cakes, they think of chocolate. Now I like chocolate cake as much as any red-blooded girl, but it's the last flavor I think of when I think of a wedding cake. I imagine a compromise is probably coming down the pipe at some point. The glory of a multi-tier cake is that the tiers can be different flavors so maybe he'll get his chocolate after all. But if he thinks he's going to try to smush some chocolate mess all over my face (and risk messing my dress), I've got news for him.... Sound off: What's your preference for wedding cake flavors? Back to page topSpeaking from experience: pick petit fours instead ... then you can have different "cake varieties" in every flavor and frosting, AND you won't have to ask any of your dear friends or relatives to be the dreaded "cake cutter" at your reception. Petit fours are easier to eat, serve, display and store (of course you'll want to order extras!) - and they don't dry out as quickly as regular white wedding cake.

Back to page topFor my first wedding, I opted for the traditional white wedding cake with white frosting. But, knowing my affinity for chocolate, my then to-be and now ex-mother-in-law contacted my cake maker and had her also make a chocolate layer cake with white frosing designed to match the big ol' fat wedding cake and had it placed at the bride-and-groom's table.
For my second wedding -- on a Thursday evening on a beach in Indiana in May -- the 14 guests joined us at a local restaurant and each chose their own wedding dessert: There was a lot of cheesecake passed around.
And, while my sister's groom would have loved a Hostess wedding cake like one of these: http://www.yumsugar.com/229285, they actually had a tasty white cake with a buttercream frosting instead of the regular stiff sugar kind.

Back to page topMmmmm...cake. I think the lemon/raspberry combo sounds great for a summer wedding. But, there is something to be said for chocolate. That's what my husband would vote for. I think your guests will be happy with any cake you choose, as long as vegetables aren't involved. I'm talking about you, carrot cake!

Forget the Petit fours, while they are ever so lovely and less messy they can cost more than a wedding cake… Even the increasingly popular cupcakes or individual cakes at each table- typically start at $2.25 per cake/slice... Besides a multi-tier provides something for everyone! As a symbol of compromise to your groom, allow him to have his chocolate layer, just make sure your lovely lemony white tier is at the bottom, that way your first slice of wedding cake is your favorite, and less messy…..
If your still looking for flavor ideas try the following: White with Lemon and Gran Marnier, Chocolate with raspberry, White chocolate Ganache, and Italian crème cake.... All were favorites at my fall nuptials….

I love the idea of lemon and raspberry...perfect for summer. As for the chocolate part, maybe you can make the top layer chocolate...isn't that what the groom's cake is for? Or am I mixing that up with the top layer you freeze and eat on your one-year anniversary? Whatever. I vote for lemon raspberry. If he wants chocolate, get him a chocolate cupcake.
