Hot summer days can make dinner a challenge. After all, you can't eat just ice cream (right?). Here is a recipe for a sweet summer salad that always gets rave reviews.

Strawberry Romaine Salad
Romaine lettuce
Strawberries, sliced
Monterrey Jack cheese
Slivered almonds, toasted
Dressing:
1/2 cup vegetable oil
1/2 cup white sugar
1/4 cup red wine vinegar or cider
1 clove garlic, minced
dash salt
dash pepper
dash paprika
Shred romaine and place in bowl. One head of romaine serves 4-6 people easily.
Sprinkle with sliced strawberries to your liking. I usually use about two cups worth.
Prepare dressing by combining ingredients into a shakable container and shaking vigorously.
Pour over romaine and toss to coat.
Sprinkle cheese (one cup or more) and toasted almonds.
Serve fresh.

Back to page topFruit pizza is an easy-to-make dessert we like in the summer.
Place pre-made cookie dough in a greased pan (I buy the disposable pans) and spread it out. Cook at 325-degrees until it is lightly browned.
Let the cookie cool down, then mix an 8-oz. block of cream cheese (I use the 1/3-percent reduced fat cheese) with 3/4 cup sugar and a tsp. vanilla extract.
Spread onto the cooled cookie. Make a design on top with fresh fruit (berries, nectarines, etc.) of your choice.
This is easy (which we all like in the summer) and goes over well at group events.
