Sourdough pancakes are the best pancakes. By comparison, all other pancakes taste dry and cakey.
The strangest thing about sourdough pancakes is the starter. The sourdough starter, essentially home-grown yeast, is the core of sourdough pancakes.
People typically get a sourdough starter from a friend or relative. The starter is mixed with flour and water the night before making pancakes, then left to sit. Before adding other ingredients, part of this new batch is put back in the refrigerator until next time.
The cycle goes on and on and on, until the cook accidentally throws away the starter.
My folks have a starter a friend gave them in the early 1970s. So this fungus colony has been alive almost as long as I have.
